About the Brewery
Based in the north Anglesey village of Penysarn we are a true microbrewery, actually fitted into an 18th century cottage built to house miners working in the historic copper mines of Parys Mountain. In fact, the brewery itself is in sight of the mountain and we're next to what used to be a miners pub. Mind you, in the heyday of the mines there were 14 of them in the village!
The building may be historic but our beers and ciders are made in a purpose built brew room using the latest German and British fermenters. |
We started like most brewers as keen homebrewers, making oddities like grapefruit wine (lovely, just ask for the recipe!) and alcoholic sarsaparilla (truly awful!).
Along the way brewing countless varieties of beer kits, cider kits and wine kits until one day we thought, could we do this from scratch? Both of us are keen cooks and cook from scratch pretty much every day, why not do this with our beer? So, from then on brewing became the alchemy of turning actual malt and hops into beer by just adding yeast and time (the same principle as the ancient German 'Rheinheitsgebrot' purity laws). Now we work from a palette of 6 malts, 8 hops and 5 different yeast stains to produce our beers, always experimenting with new flavours and styles. |
